The cake dough is very simple, prepared with the basic ingredients of a wheat cake, to which we also add carrots. I used two large carrots, but if you want a cake with a more intense carrot flavor, use four medium carrots. If you like cakes that are more moist, don't bake them too much - especially this cake that, if baked too much, loses its true flavour.

Ingredients for making fluffy carrot cake in an electric mixer:
For the fluffy carrot cake:
4 medium eggs
2 large carrots
1 cup of sugar (160 grams)
2 cups of wheat flour (280 grams)
1 cup of oil (240 milliliters)
1 teaspoon of baking powder
For the creamy chocolate syrup:
1 box of cream (200 g)
200 grams of semisweet chocolate
How to make fluffy carrot cake in an electric mixer:
The first step in making this fluffy chocolate carrot cake is to gather all the necessary ingredients.
Prepare the carrot by peeling and chopping it in a blender, in a food processor or simply grating on a grater.
Place the eggs in a bowl, add the sugar and, with the help of an electric mixer, beat well until doubled in volume and creamy.
Add the carrot and oil and beat again with an electric mixer.
Tip: Beating these ingredients together helps to incorporate more air into the dough, which results in a fluffier cake.
Add the sifted flour together with the yeast and mix gently, with a spoon, until you get a smooth, lump-free dough.
Tip: Do not beat the dough after adding the flour, so as not to develop the gluten present in it and to avoid a solid cake.
Grease and flour a round pan without a hole (22-24 cm in diameter) and pour the dough into it. Bake at 200ºC for 30 to 40 minutes, or until you pass the toothpick test.
Tip: If the cake starts to brown before it becomes solid, cover it with a sheet of aluminum foil.
While the cake bakes, prepare the creamy chocolate syrup: place a pan with the cream and chopped chocolate over medium heat and keep stirring. Turn off the heat when the chocolate is completely melted and incorporated into the cream, as in the photo.
